CHICKEN SALAD | 2lbs boneless cooked chicken 1 cup mayonnaise 2 tablespoons peach juice 1/2 cup heavey cream whipped salt white pepper 2 cups peaches canned drained diced Cut cooked chicken breast meat into 1/2 inch cubes and set aside. Blend mayonnaise and peach juice in a 2 quart mixing bowl and fold in whipped cream. Season with salt and pepper as needed. Add cubed chicken meat and diced peached and mix lightly til chicken coated stir gentley until blended. Refrigerate for 1 hour. Serve cold.
